Artichoke Tuscan Orzo Shrimp

Creamy orzo pasta with artichokes, tomatoes and shrimp.

Ingredients
Black pepper to_taste
Chicken Broth 1 can
Garlic 5 cloves
Half & Half 1 cup
Italian Seasoning 1/2 teaspoon
Olive Oil 2 tablespoon
Roma Tomatoes 2 count
Salt to_taste
Shrimp 1 pound
Spinach 2 cup
Artichoke hearts 6 ounce
Orzo 1 cup

Steps
Step 1) Wash and dry produce, thin mince garlic and chop tomatoes.

Step 2) Heat a pan to medium-high heat and add olive oil. Once hot, add shrimp, garlic, Italian seasoning, salt and pepper. Cook 2 minutes per side if using fresh shrimp or 3-5 minutes per side if frozen. Once shrimp is cooked remove from pan and set aside.

Step 3) To the same pan (now empty) add tomatoes, artichokes, orzo and olive oil. Cook on medium heat, for about 2 minutes stirring constantly.

Step 5) Now add chicken stock. Bring to a boil then reduce to a simmer, cooking 5-10 minutes. Stir occasionally.

Step 6) Add spinach and half & half. Stir to combine on a low heat until the spinach wilts. Season generously with salt and pepper.

Step 7) Plate pasta with shrimp on top, and sprinkle with additional Italian seasoning and enjoy!
